1 tbsp olive or grapeseed oil
2 cloves garlic, chopped
2 scallions, chopped
1 package extra firm tofu, drained, toweled off and crumbled or 1 lb. ground turkey/beef
1tbsp oregano
1tsp chili powder (optional)
1 bayleaf
1tsp salt
1 tsp black pepper
1 large can of diced tomatoes
2 cans kidney beans, undrainedHeat olive oil in Dutch oven over medium heat
Add garlic and scallions and cook until slightly brown
Add crumbled tofu or turkey or beef
Add spices cooking until tofu is firm or meat is browned
Add tomatoes and kidney beans to the pot, stir
Cover and cook 45 minutes, stirring occasionally .
