2 cups of water
1 cup of quinoa
1 cucumber, finely chopped
1 tomato, finely chopped
1 red pepper, finely chopped
1 yellow or green pepper, finely chopped
2 scallions, finely chopped or you can use red onion
1/3 cup parsley or cilantro (optional)
1 cup of garbanzo beans
1/4 teaspoon sea salt
1/8 teaspoon ground black pepper
½ lemon
1 tablespoon extra virgin olive oil
Put water and quinoa into a pot; add a pinch of sea salt (optional), bring to a boil, stir, cover, and reduce heat to a simmer.
Cook until quinoa is soft and water is absorbed -- about 20 minutes.
Chop cucumber, tomato, peppers, scallion and place into a bowl, toss in the garbanzo beans and season with lemon, olive oil, sea salt, and black pepper.
Put quinoa in a separate bowl and let it cool to room temperature then add vegetables in and mix together.
