1-2 tbs. olive, grapeseed, or coconut oil
2 tbs. fresh ginger, minced
2 cloves garlic, minced
¼ tsp. cayenne –optional
1/2 tsp. paprika
1 tsp. turmeric
1 tsp. cumin
2 cups cooked quinoa (1 cup dry)
1 bunch of kale, remove stems and tear into bite-size pieces
Sea salt and fresh black pepper, to taste
1-2 tbs. raw sesame seeds, or raw sunflower seeds
Heat pan over medium or medium-low, add oil, and sauté ginger, garlic, and spices for 2-3 minutes.
Add cooked quinoa and kale and cover, allowing the kale to steam, for approximately 3-4 minutes.
Stir well and continue to cook for a few minutes until everything is well combined.
Season with sea salt and fresh black pepper to taste.
