"I was diagnosed with Fibromyalgia and Chronic Fatigue Syndrome about 10 years. Since then, I’ve been to numerous doctors and alternative health providers to find relief for my symptoms. "When I first started consulting with Karen, I could hardly go a session without bursting into tears. I was still coping with a painful break-up that nearly devastated me. When I met Karen, I had no doubt in my mind that she would be the one to help me.
At 23, I knew something had to give. I had been dieting since I was 8 years old, and my body was completely out of whack. Four years of college and excessive alcohol consumption didn't help either. During our first session, I told Karen that I would not drink Diet Pepsi for 2 weeks (after drinking it for over 10 years). As soon as I did, I started sleeping better and I lost weight!! "I met Karen at a Health Fair at my firm. I went over to introduce myself and see what Holistic Health and Nutrition was about. Something drew me to her. Karen had a very warm and inviting smile. Within the first few moments of speaking to her I felt very comfortable and at ease. It felt like I had known Karen for a long time and was speaking to an old friend. She asked me what I was looking to change in life. I started to talk about my diet and wanting to eat healthier and lose weight. As the conversation got more in depth, I told Karen that I was too concerned about others all the time and didn’t focus enough on me. I always had a smile on my face but wasn’t always happy. I also stopped using artificial sweeteners (Splenda, Equal, etc.) and now use natural sweeteners. I feel more energized and feel good about the food I’m putting into my body. I also started exercising and lost some weight.
Karen has also helped me gain confidence and overcome my fear of driving. After 11 years of not getting in the driver’s seat I took my first refresher course. I’m looking to buy a car and continue driving. It feels so good to get over that fear. It was something that had been on my mind for a long time but didn’t do anything about it. "I had read several health books while my Mom was in hospice. I learned how badly her diet really was and how much more was available to protect our bodies. I switched to nearly all organic foods, cut down or cut out what wouldn’t help me and began looking into so-called health foods. What I found was that these health foods were not weird or secrets at all. They were being consumed in most other countries. I started shopping at Trader Joe’s, bringing healthy frozen lunches to work and ensuring my brother had organic milk and meat readily available. I didn’t cook much, but there was always healthy, often organic, canned of frozen food available. I did not have the time or inclination at this time to look inward.
When I met Karen I knew right away she had what I call ‘the light.’ Balance, joy, health and warmth literally radiated from her. We talked about my experiences and how I got where I was. She told me there was a higher level. I absolutely believed her and knew she would get me there. My two biggest issues were that I was literally exhausted and needed to sleep on Saturday afternoons and my skin had never been great. I thought these were minor inconveniences and the product of my hectic, happy lifestyle. It turned out they were symptoms of a diet lacking certain nutrients and energy.
In our first consult she was so excited for me and the journey we’d be taking. Karen told me she had all these keys to better health and life. I knew she did. It had been two years since my Mom died and my life changed for the better. I had embraced this new life – the changes had now become the norm and I was ready. Age gives you the knowledge that there is always a next step, a higher level. I instinctively trusted Karen to get me there.
And I am there. Growing and loving and looking forward to every minute, every joy and heartache. Karen first introduced me to whole grains and root vegetables. She’s given me easy recipes because I told her up front I hate cooking. Slowly, I began cooking once a week, sometimes two meals in one day. I read labels and care even more about what goes into my body. Now I’m cooking enough food to last a week (breakfast, lunch and dinner) for my brother and I. My pantry and freezer only have essentials. I crave the food I cook (I still can’t believe this). We’re eating whole grains, greens, and root vegetables. I’m drinking healthy teas (red and green). I no longer crave sugar or junk food. After a tour of a local health food store, I’m more aware of what is available and am not confused by odd product names, brands and packaging. This alone has made a world of difference.
Food is only the first layer, of course. I’m more confident, more balanced, more patient with myself and others. I always exercised, but now have the energy to keep going. I don’t crash anymore; I don’t need naps and sleep 7-8 hours a night. My skin is actually clear! My body is functioning better than I ever thought it could and this has freed up resources to enhance other areas of my life. I had fallen out of daily prayer and am back to that. It’s healthy foods, healthy emotions, and a positive outlook. It is a journey I started over ten years ago and as I see the pieces of the puzzle and the layers and levels of my life fall into place, I know am there.

When I did, it would usually consist of pasta and some frozen veggies. I usually skipped breakfast and found I was eating out most of the time. Also, it was a toss up to decide which was a worse habit - coffee or salt. Coffee, light and sweet, first drink in the morning, and adding salt to my food before tasting. Starting with Karen's marinated kale salad and sweet potato fries, it was just the beginning for me, and I can't stop. I love cooking new dishes, the more colorful the better. Reading materials suggested by Karen also gave me insight. Different ways of looking at things, different ways of treating myself - it is an amazing whole package. I feel better. Over the past 8 months I could barely start a sentence without saying "My nutritionist told me that..."
You gave me so much knowledge and support and know now I KNOW that I eat healthy. It goes so much deeper then that though; I live breathe and think healthier too. With my 30 point list of improvements and changes since the beginning of the program, I have exceeded all of my goals I had when I simply wanted to "hire a nutritionist" because you are really so much more. I really enjoyed your warmth and understanding in our sessions. That counseling really helped me and it also made me aware of how everything going on in your life effects how and what we eat.
There were drastic improvements as well as subtle changes that I can attribute to your advice. Weight loss, more energy, increased immunity, sound sleep and frequent BM's are the few that I noticed instantly. Your advice and suggestions also helped me find a happier relationship, have an open mind and heart, become more spiritual, set goals, be honest and recognize what I need and want, and having an increased self-esteem and body image. I think it is much easier to love yourself and be positive when you know you are putting quality foods inside your body and when you feel balanced and are free from negative forces that impede your success.
You also urged me to reduce drinking which is one of the most positive and stabilizing suggestions. I now know I can search out alcohol-free fun and not reduce myself to the lowest common denominator in socializing. I have also been keeping in touch with my non-drinking friends more and hope to have them as company when I do want to go out and dance etc...
The program makes sense and does a good job of educating you as well as altering your behavior and habits so that all the knowledge and changes stick. One diet isn’t for everyone and it doesn’t allow for natural desires and needs. Never did I feel guilty for straying for a healthy path. You taught me to indulge, get it out of my system and move forward. My desire for bad foods is way less and I cook more too. Thanks so much.

There are so many benefits that I am enjoying since starting Karen’s program. One of the most significant and life changing benefits for me is the fact that I don’t have to take my stomach pills anymore. For 6 years I’ve been taking a variety (about 6 or 7 different types) of stomach pills for a problem that was never medically labeled. Since beginning Karen’s program, I have not used my stomach pills and I don’t anticipate ever using them again J. This has made eating so much more enjoyable and less embarrassing, since I don’t have to pop a different pill every time I take a bite of food.
Before working with Karen, I questioned everything about myself; who I am, what I’ve done for/to myself, who I want to be, what I want from life, and can I ever be happy when I live with so much disappointment. From the day I met Karen, I knew she was going to impact my life. While working with Karen, I have learned to accept that I am not perfect and that’s ok. Karen has helped me discover what the roots of my questions are and how to work through them. She has opened my eyes and mind to being more conscience of food, how I eat, when I eat and how it makes me feel. This has made such a tremendous different in my life. In fact, I truly believe that due to this, I don’t have to take my stomach pills, as mentioned above J !! Another very important thing that Karen has made me discover is that I am beautiful, both internally and externally, and it’s ok for me to feel and say it! She’s made me realize that I deserve to put myself first; to pamper and take care of myself, the way I do for others. I can honestly say that working with you has opened up a whole new way of approaching things. It is true that you are what you eat, and my relationship with food, (thanks to you), has dramatically changed over these past several months. So, I have changed as well.
For as long as I can remember, I have had issues with food. Too much, the wrong stuff, not enough balance, not enough enjoyment in it, a real love-hate relationship. That has changed. I am beginning to see and feel the real benefits of good, fresh, organic food. Grains, leafy greens, beans, all these were relatively new to me and not at all a part of my daily diet. Now they are and I can tell the difference in the way I feel and look. I shop differently for food now, in places I wouldn’t have sought out before, make different choices in restaurants and supermarkets and feel good about those choices and no longer crave sweets and sticky stuff the way I used to. It wasn’t so much that I didn’t know these options were available; they just somehow didn’t apply to me before. Plus, I have learned lots of other wonderful things about exercise, spirituality, and just enjoying the day. This turns out to be about a lot more than just eating!
